Herbs crusted Roast Pork
I love roast pork, I just don’t do it often. The roasts themselves tend to be cheaper then beef roast, they are easy to do on a lazy night and super flavorful.
1 pork roast
3 tea spoon dried herbs
1. Pre-heat the oven to 375F.
Drizzle a bit of olive oil unto the roast and massage in.
2. Add the herbs and massage in. I used a modified version of Herbes de Provences, but use which ever dried herbs you like. Add salt and pepper to taste.
3. Put in the oven for 2h or until the internal temperature is 163F.
4. Allow to rest for a few minutes and slice. It should be cooked all the way through but still juicy. Don’t slice all at once! Any left overs keep better as a whole roast.
