Sausage mix

A great substitute for anything that involves pulling sausages out of their casing. Make sure you get fresh ground meat, not made from previously frozen parts.

Ingredients :
3-4 lb of ground pork
2 table spoon red chili flakes
2 table spoon coriander seeds
2 table spoon paprika
3-4 table spoon fennel seeds

1. Grind and combine all the spices.

2. Add about 2 table spoon of the spice mix per pound of ground meat.

3. Mix to combine and portion off in freezer bags. Throw them in the freezer and pull out as needed.

Mechoui Lamb

This makes for succulent, spice-crusted lamb that falls off the bone. Makes the whole house smell delicious too.

Ingredients
1 leg of lamb
70g butter
3 cloves of garlic
2 tea spoon cumin
1 tea spoon paprika
3 tea spoon coriander
1/4 tea spoon salt

1. Pre-heat oven to 425F
Grind the spices and combine with the butter.

2. Crush the garlic and add to the butter. Mix until smooth and incorporated.

3. With a small sharp knife, make little incisions into the lamb all over, making little pockets.

4. Rub the butter mixture all over, making sure some goes into those pockets. Place on a grill in a roasting pan. Cover with aluminum foil.

5. Put in the oven. Bake for 10 minutes. Baste the meat and lower the oven to 315F. Cook for an other hour, hour and a half, basting every 30 minutes. The roast is done when the meat pulls easily from the bone (or starts to fall apart, if you have a boneless roast).

6. Slice and serve.

Shawarma style chicken wraps

There are a lot of “do ahead” steps, but they don’t all need to be done at the same time.

Notes for next time :

  • Cook the chicken on a grill to let the fat drip away
  • Roast the garlic for the yogurt sauce.

Ingredients :
8 chicken thighs
Pita bread

For the marinade
3 table soup olive oil
1 tea spoon cumin
1 tea spoon paprika
1 tea spoon turmeric
1 tea spoon salt
4 garlic cloves, minced
Zest and juice of a lemon
Zest and juice of an orange
Black pepper, to taste

For the garnish
1 red onion
1/2 cup greek yogurt
2 cloves garlic, minced
1 table spoon olive oil
1 tomato, diced
Bread and butter pickles
Iceberg lettuce

1. Combine the yogurt, garlic and olive oil for the garnish, Set aside and allow to mellow overnight.

2. Thinly slice the onion, cover with cold water. Cover and put in the fridge overnight.

3. Combine the marinade’s spices and grind them to a rough powder.

4. In a large bowl, combine all of the marinade ingredients.

5. And stir to dissolve the spices.

6. Remove the skin and bones from the chicken. Cut each thigh in half. Put in the marinade and stir to coat. Cover and marinade overnight.

7. Pre-heat the oven to 350F. Cook the chicken on both sides to get some color.

8. Finish in the oven until cooked through.

9. Open the pita bread. Slather with some yogurt sauce. Add the chicken, tomato, lettuce, onions, and pickles to taste. Roll and enjoy.

Lazy Jambalaya

Wholly inaccurate, but easy enough on a weekday. A satisfying one-pot meal with plenty of leftovers for lunches. Leftover portions freeze rather well, so that is always a bonus.

Ingredients :
3 Italian sausage (spicy)
1 onion, chopped
3 celery branches, chopped
1 yellow bell pepper, chopped
1 cup frozen peas
2 cloves of garlic, minced
1 can diced tomatoes
2 cups rice
4 cups chicken broth
1/2 table spoon cajun spices
1 table spoon paprika
1 lb shrimp
olive oil

1. In a large enamel faitout or dutch oven, warm about a table spoon of the oil. Remove the casing from the sausages and add to the pot.

2. Break apart into clumps as it cooks.

3. Once the meat is almost fully cooked, add the onion, bell pepper and celery.

4. Stir in and cook for a  minute or two then add the frozen peas.

5. Give the peas a mine to start thawing then add the tomatoes and garlic.

6. Add the rice. Stir it in, to coat the rice.

7. Add the chicken broth, paprika and cajun spices.

8. Bring to a boil then lower the heat to low and cover. Simmer for 10 minutes (to get the rice started)

9. Add the shrimps, still frozen, in a single layer on top.

10.  Cover and return to heat for 5-10 minutes, or until the shrimps are nicely pink.

11. Allow to stand for a few minutes (the liquid will be absorbed). Portion out and enjoy!

Rabbit stew with barley

Spring is having identity issues this year. It’s still cold outside (enough to wear a jacket, in mid May!), so I wanted something braised and nice and warm. I’d also been wanting to experiment with rabbit meat for a while, so this was the result.

Ingredients
1 rabbit, cut in serving pieces
2 table spoon flour
salt and pepper
1 tea spoon paprika
olive oil
150g spicy pancetta
1 onion, diced
1 garlic clove, minced
1 fennel buld, cored and sliced
2 cups white wine
1 table spoon tomato paste
2 table spoon barley
1 sprig of fresh rosemary

1. In a plate, combine the flour, paprika and salt and pepper to taste. Do not under salt.

2. Dust the rabbit pieces in the flour, shaking off excess.

3. Warm some oil in the bottom of a dutch oven or french faitout.
Sear on both sides to get some color. Work in batches.

4. While that’s going, dice up the pancetta.

5. When all the rabbit has been colored, set it aside.

6. Lower the heat to a medium-low and throw the pancetta into the pot. It will smoke. A lot.

7. Cook, stirring often, until most of the fat has been rendered out.

8. Add the fennel and onions.

9. Cook until the onions are translucent and the fennel starts to soften. Add the tomato paste and garlic.

10. Add the wine, scrapping up anything stuck at the bottom of the pot. Add the rosemary.

11. Nestle the rabbit back into the pot, making sure it’s as much under the liquid as possible.

12. Bring to a boil, then lower to a simmer. Add the barley.

13. Cover and simmer for 45 minutes. Then remove the lid and continue to simmer for a further 30 minutes (to allow the sauce to reduce)

14. Serve with good crusty bread to soak up the sauce. Enjoy!

Grain and butternut squash salad

I made decadent cupcakes yesterday. I mean it… these are good but so darn rich. So I made a grain based salad for dinner tonight, to make myself feel less guilty.

Ingredients
8 oz farro
4 cups chicken stock
1 butternut squash
1 pack of turkey breast strips
1 bunch green onions
juice of one lemon
small handul italian parsley
2/3 cup apple juice sweetened dried cranberries
1/4 tea spoon smoked paprika
salt and pepper
1 tea spoon honey
8 table spoon olive oil

1. Pre-heat the oven to 400F.
Peel the butternut squash. Cut in half and remove the seeds. Then cut into cubes.

2. Toss with 1 to 1 1/2 table spoon of olive oil and a good sprinkle of salt and pepper. Put on a baking tray in a single layer.

3. Put in the oven until tender but still holding it’s shape, about 20-25 minutes. Allow to cool.

4. Mean while, combine the farro and chicken stock.

5. Bring to a boil then lower the heat. Cook, uncovered until all the liquid is absorbed, stirring once in a while. It took me about 30-35 minutes. Transfer to a large bowl and allow to cool.

6. Cut the turkey into cubes. Heat 1/2 table spoon to 1 table spoon oil in a skillet. Cook the turkey with the smoked paprika and a bit of pepper.

7. Roughly chop a small handful of Italian parsley and add to the cooled farro.

8. Add the cranberries.

9. Finely chop the green onions and add to the salad.

10. Add the cooked turkey.

11. And as much of the squash as you care for. I added about half of the baking sheet.

12. In a different bowl, whisk together the lemon juice and honey. Add the remaining 6 table spoon of olive oil in a drizzle while whisking.

13. Add the dressing to the salad and mix well to combine.

Berry Beer Baked Beans

A delicious recipe, not too sweet or heavy that I picked up on 101 cookbooks. Go check out the website for the full recipe, only my pictures to see here!

I swapped the vegetable broth for chicken broth since that is what I had on hand. Mine also took forever to cook (2-3 hours) since the beans were really old.
